Anyone felt burnout this year? I can confirm you are not alone. I thought Iโd finally reached that โageโ but committed to getting to the bottom of it โ and yes, it was almost certainly burnout. Psychologically, burn out manifests to physical eventually โ I learned the hard way!

I follow intermittent fasting, I follow keto, I follow IIFYM, I don't eat veg, I am vegan, I only drink at the weekendโฆ There are so many options out there.
I see everyday people jump from option to option, or announcing a new style of eating. There is not necessarily a โrightโ way!! For me, the most important question in nutrition is โhow is that working for you?โ
If your answer is โgreatโ โ then continue with what you are doing!
If the answer is anything else โ then you need to ask yourself why are you doing it? Hey, if there is a medical reason, I get it, then your dietician will be helping you. If not, you are kidding yourself or you may need to ask yourself how important your health goals are to you.
To get rewards โ you have to earn them! This means there is a cost โ this could be in the form of sacrificing a current habit, or by investing effort in a new habit!
Either way, it requires change!

1 (8-inch) whole-wheat tortilla
ยฝ cup pure pumpkin puree
ยผ tsp. chili powder
1 dash ground cumin
3 Tbsp. pepper Jack (or mozzarella) cheese (ยพ oz.)
Nonstick cooking spray
2 Tbsp. pico de gallo (or chunky tomato salsa)
1 Tbsp. nonfat plain yogurt
1 tsp. chopped fresh cilantro (for garnish; optional)
Spread half of tortilla with pumpkin; stopping ยฝ-inch from edge.
Top with chili powder, cumin, and cheese; fold in half.
Heat nonstick skillet lightly coated with spray over medium heat.
Add tortilla; cook, turning once, for 4 to 5 minutes, or until cheese is melted and tortilla is golden brown.
Place on serving plate. Top with salsa and yogurt. Sprinkle with cilantro if desired.
